Sweet Potato Glass Noodles with Veggie Stir Fry

This delectable dish features stir-fried veggies and sweet potato glass noodles, complemented by a seasonal vegetable stir-fry. Tossed in a delightful blend of sweet apricot preserve, soy sauce, and spicy gochujang, it's served atop a bed of fresh spring lettuce mix, accompanied by crispy roasted chickpeas. This dish has spicy, tangy, sweet and salty all in one bit! This has quickly become one of my favorite go-to recipes. I'm excited to share this plant-forward masterpiece during my teaching session at Lake Austin Spa and Resort in April 2024. Yum!

Curry Vegetable Corn Chowder

Last week, while feeling unwell, I whipped up an incredible curry vegetable corn chowder. It boasted a velvety texture, a hint of spice, and was brimming with hearty vegetables such as corn, mushrooms, bell peppers, and potatoes, all simmered in a coconut-chicken stock. Topped with fresh basil and a splash of lime juice, it struck the perfect balance of flavors. This soup not only hit the spot but also left me feeling nourished and satisfied. If you made this dish please take a picture and I will repost it on my social media. Cheers!

The Bouquet Garni, Sachet d'Épices, and Oignon Brûlé are essential elements in preparing stocks, sauces, and soups, serving as crucial components for infusing flavor into your dishes. Mastering the art of using these aromatics is key to achieving a well-balanced taste and appearance in your culinary creations.

Chocolate Cupcakes with Cream Cheese Frosting

This particular recipe holds a special place in my heart, as it unfailingly produces cupcakes of perfection. he secret to achieving the utmost moistness lies in the addition of boiling water. Incorporating boiling water into the batter accomplishes two crucial tasks: first, it effectively eliminates lumps in the cocoa powder and dissolves the sugar seamlessly. Additionally, the boiling water activates the leavening agents, namely baking powder and baking soda, guaranteeing a delightfully fluffy cupcake.

Chicken Meatball Soup

I love making Chicken Meatball soup during the winter season. I especially love using  ground chicken meatballs for their easy, hands-off preparation and flawless oven cooking—no need for flipping or stirring. This versatile recipe also suits other ground meats such as turkey or bison. My version omits the egg and breadcrumbs. I have discovered that organic, pastured chicken boasts its own delightful flavor, and with minimal additions like fresh parsley, Italian seasoning and gluten-free breadcrumbs, you'll hardly miss the traditional version.

Asparagus with Parmesan Herbed Cheese Sauce.

This Asparagus with Parmesan Herbed Cheese Sauce makes for a quick and delightful side dish suitable for any dinner occasion. Its preparation is effortlessly swift, with the only significant task being the trimming of the asparagus. Utilizing a vegetable peeler for the stalks and a knife for the ends, take care to be gentle and avoid breaking the tips, as they contribute to the vegetable's beautiful presentation. "Thai Fresh: The Cookbook"

My admiration for Thai cuisine knows no bounds, with a special fondness for Pad Thai. Living in close proximity to the exceptional Thai restaurant, Thai Fresh, in South Austin has been a true privilege. My daughter and I frequently indulge in Thai Fresh's happy hour, savoring cups of the creamy, sweet, and spicy Tom Kha alongside a shared plate of Pad Thai.
